The Delmonico steak is a premium cut of beef known for its rich marbling and tenderness. Tender to the point of being almost buttery, this steak melts in your mouth. It’s typically cut from the ribeye and is the first 3" of the chuck eye. It was popularized by Delmonico's restaurant in New York City.
